Tomato Tofu Stir Fry with Broccoli and Rice

In a medium size pot:

2 cups of water

1 cup of Wild Rice blend

1/2 teaspoon salt

Bring to a boil, reduce to medium-low heat, cover and cook for ~ 50 minutes

In a large sauce pan, throw in:

4 tbsps coconut oil

1/4 cup of chopped onion

3 medium sized tomatoes (chopped)

Salt to taste and let cook for about 5 minutes, then add:

1/2 pound of Tofu (cubed or sliced into thin rectangles)

2 tbps Balsamic Vinegar

Let sizzle for about 8 minutes, then add:

2 cups Broccoli Florettes

Stir for about 3 minutes, then add:

Cooked Rice

Taste and add balsamic vinegar as needed.

Stir and let sizzle for about 5 minutes


SERVE and enjoy!
