Mustard Dressing for your Haricots Verts (Green Beans)

This a a great way to increase the flavor of your green beans, without increasing caloric intake:

In a small bowl mix:

3-4 tablespoons of Stone-Ground Mustard

1-2 tablespoons of white Vinegar

If you like more subdued flavors and don’t mind the extra calories, you can add a tablespoon of oil. I learned this delicious combination in France, where they used olive oil as the base of the dressing. As a lover of intense flavors, I have found that I can eliminate the oil and be completely satisfied with a nice plate of lightly steamed green beans. This dressing can also be used on green salads, however, and in those cases I do enjoy a little oil.

 This recipe takes about 1-2 minutes to whip up and steaming your green beans shouldn’t take more than 3-4 minutes. It just doesn’t get much easier much easier than this!
